Description

Creamy Marry Me Chicken Pasta is a cozy skillet dinner with juicy seasoned chicken, tender pasta, garlic, sun dried tomatoes, and a Parmesan cream sauce. It tastes rich and saucy without taking all night.


Ingredients

  • 12 oz dry rigatoni or penne pasta
  • 1 to 2 tbsp olive oil
  • 2 large boneless skinless chicken breasts
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 half tsp dried thyme
  • 1 half tsp red pepper flakes
  • 1 half tsp salt
  • 1 quarter tsp black pepper
  • 5 fresh garlic cloves, minced
  • 1 quarter cup chopped sun dried tomatoes
  • 1 and 1 half cups chicken stock
  • 1 cup half and half
  • 1 half cup freshly grated Parmesan cheese
  • Fresh basil, chopped

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, then reserve 1 cup pasta water and drain.
  2. Season the chicken: Pat the chicken dry and coat both sides with dried basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and black pepper.
  3. Sear the chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken for 6 to 7 minutes per side, until golden brown and the center reaches 165°F, then rest it on a board.
  4. Start the sauce: Add minced garlic and sun dried tomatoes to the skillet. Cook for 30 seconds, then pour in chicken stock and scrape up the browned bits.
  5. Make it creamy: Stir in half and half and simmer gently for 3 to 4 minutes. Add Parmesan slowly and stir until melted and smooth.
  6. Finish and serve: Toss the pasta in the sauce, adding reserved pasta water as needed until glossy. Slice the chicken, place it over the pasta, and top with fresh basil.

Notes

Use freshly grated Parmesan for the smoothest sauce. Store leftovers in the fridge for up to 3 days and reheat gently with a splash of stock, water, or half and half.
