Description

Creamy Triple Berry Baked Oatmeal is a cozy gluten free and dairy free breakfast made with rolled oats, coconut milk, maple syrup, strawberries, blueberries, and raspberries. It bakes into soft, sliceable oatmeal with juicy berry pockets and a lightly golden coconut almond topping, making it great for brunch or easy breakfast meal prep.

Ingredients

Wet ingredients:

  • 2 eggs
  • 1/4 cup pure maple syrup
  • 1 15 ounce can light coconut milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon almond extract

Dry ingredients:

  • 2 cups old fashioned rolled oats, gluten free if needed
  • 1/4 cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Mix ins:

  • 3/4 cup strawberries, hulled and halved or diced
  • 3/4 cup blueberries
  • 1/2 cup raspberries, or blackberries

Optional:

  • 1/4 cup sliced raw almonds
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Prep the pan: Preheat the oven to 350°F and grease a 9 by 9 inch baking dish with oil or nonstick cooking spray.
  2. Whisk the wet ingredients: In a large bowl, whisk the eggs, maple syrup, light coconut milk, vanilla extract, and almond extract until smooth.
  3. Add the dry ingredients: Stir in the rolled oats, shredded coconut, baking powder, and salt until the oats are evenly coated.
  4. Fold in berries: Gently stir in half of the strawberries, blueberries, and raspberries, then pour the mixture into the prepared baking dish.
  5. Top the oatmeal: Scatter the remaining berries over the top, then add sliced almonds and extra shredded coconut if using.
  6. Bake and cool: Bake for 35 to 45 mins, until the edges are lightly golden and the center is set. Cool for 10 mins before slicing.

Notes

  • Use old fashioned rolled oats for the best soft but sliceable texture.
  • If using frozen berries, thaw and drain them first so the oatmeal does not turn watery.
  • Store covered in the fridge for 4 to 5 days, or freeze slices for up to 2 months.
  • Reheat slices with a splash of coconut milk to keep them creamy.
