Crispy Ground Chicken Burgers

  • Author: Savoreza

  • Yield: 5 servings

Description

Crispy Ground Chicken Burgers are juicy ground chicken patties mixed with mayo, panko, herbs, green onion, and Worcestershire sauce, then coated in panko and pan fried until golden. They’re crunchy outside, tender inside, and easy to serve on buns with lettuce, cheese, slaw, mayo, barbecue sauce, or your favorite burger toppings.

Ingredients

  • 1 1/2 pounds ground chicken
  • 1/4 cup neutral oil, for pan frying

Panade and seasoning mixture

  • 1/3 cup panko breadcrumbs
  • 3 tablespoons mayonnaise
  • 1/3 cup fresh parsley, finely chopped
  • 2 tablespoons green onions, finely chopped
  • 1/4 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon Worcestershire sauce

Breading

  • 3 tablespoons all purpose flour
  • 1 egg
  • 1 tablespoon water
  • 1 cup panko breadcrumbs

Serving options

  • Hamburger buns
  • Lettuce
  • Cheese
  • Mayonnaise
  • Mustard
  • Ketchup
  • Barbecue sauce
  • Pesto
  • Slaw
  • Favorite burger toppings

Instructions

  1. Set up breading: Add flour to one shallow bowl, whisk the egg with water in a second shallow bowl, and place panko breadcrumbs on a plate.
  2. Mix the patties: In a large bowl, stir together the panade and seasoning ingredients, then add the ground chicken and mix lightly until just combined.
  3. Shape the burgers: Divide the mixture into 5 portions and shape each one into a patty about 1 inch thick, wetting your hands if the mixture feels sticky.
  4. Bread the patties: Coat each patty lightly in flour, dip in the egg mixture, then press into the panko until evenly coated.
  5. Rest the coating: Let the breaded patties sit for 7 mins so the panko sticks better during cooking.
  6. Pan fry: Heat the oil in a large skillet over medium high heat, then cook the patties for 4 mins on the first side and 3 to 5 mins on the second side, until golden and cooked through.
  7. Check and serve: Cook until the center reaches 160°F, then rest briefly so it rises to 165°F. Serve on buns with your favorite toppings.

Notes

  • Do not overmix the chicken mixture, or the burgers can turn dense.
  • The flour layer helps keep the panko crisp, so do not skip it.
  • If the coating browns too fast before the chicken is cooked through, lower the heat to medium.
  • Store leftovers in the fridge for 2 to 3 days, or freeze cooked patties for up to 3 months.
