Roasted Maple Dijon Chicken Thighs with Squash

Description

This cozy chicken dinner roasts juicy thighs and sweet delicata squash on one pan with a glossy maple Dijon glaze. It’s easy enough for a weeknight but pretty enough for Sunday dinner.


Ingredients

  • 6 bone in, skin on chicken thighs
  • 2 medium delicata squash, halved, seeded, and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 2 teaspoons chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary

For the maple Dijon glaze:

  • ¼ cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional garnish:

  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon extra thyme leaves

Instructions

  1. Heat the oven: Preheat the oven to 425°F and line a large rimmed baking pan with parchment paper. Pat the chicken thighs very dry so the skin can brown well.
  2. Season the squash: Add the delicata squash to the pan with olive oil, salt, pepper, garlic, thyme, and rosemary. Toss until coated, then spread the pieces out in an even layer.
  3. Add the chicken: Place the chicken thighs skin side up among the squash. Make sure the pieces have a little room around them so they roast instead of steam.
  4. Make the glaze: Whisk the maple syrup, Dijon mustard, olive oil, minced garlic, salt, and black pepper in a small bowl until smooth and glossy.
  5. Roast and glaze: Brush half the glaze over the chicken and roast for 25 minutes. Brush with the remaining glaze, then roast 10 to 15 minutes more, until the chicken is golden brown and reaches 165°F in the thickest part.
  6. Rest and serve: Let the chicken rest for 5 minutes before serving. Sprinkle with parsley and extra thyme leaves, then spoon the pan juices over the top.

Notes

Use acorn squash or cubed butternut squash if you do not have delicata, but add a few extra minutes as needed. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in a 325°F oven to keep the chicken juicy and help the skin crisp back up.
