Description

Roasted Red Pepper Pantry Pasta is a quick, silky pasta tossed with sweet roasted peppers, shallot, garlic, capers, lemon, white wine, and butter. It has a bright, savory sauce that comes together in about 30 mins, making it an easy choice for a weeknight dinner or relaxed lunch.

Ingredients

  • ½ lb dry pasta
  • 4 tablespoons butter, divided
  • 1 large shallot, thinly sliced
  • Kosher salt, as needed
  • 2 garlic cloves, very thinly sliced
  • 1 lemon, zested and juiced
  • 1 tablespoon tomato paste
  • ½ cup white wine
  • 1 cup roasted red peppers, drained and sliced
  • ½ cup capers
  • 1 cup reserved pasta water
  • Freshly cracked black pepper, to taste

Instructions

  1. Cook the pasta: Bring a large pot of generously salted water to a boil. Cook the pasta for 1 minute less than the package directions, stirring occasionally, then reserve 1 cup pasta water and drain.
  2. Caramelize the shallot: Melt 2 tablespoons butter in a large skillet over medium heat. Add the shallot with a pinch of salt and cook for a few minutes until tender and lightly caramelized.
  3. Build the sauce: Add the garlic and lemon zest and cook for 1 minute. Stir in the tomato paste, pour in the white wine, and simmer for about 1 minute.
  4. Add the peppers: Stir in the roasted red peppers and capers. Add the reserved pasta water and simmer for about 2 mins.
  5. Finish the pasta: Add the drained pasta, remaining 2 tablespoons butter, and lemon juice. Toss over the heat until the butter melts and the sauce turns glossy and coats the pasta.
  6. Serve: Taste and add salt as needed. Divide among bowls and finish generously with freshly cracked black pepper.

Notes

  • Save the pasta water before draining because its starch helps create the silky sauce.
  • Onion can replace the shallot if needed.
  • For a wine free version, use additional pasta water with a small splash of white or red wine vinegar.
  • Refrigerate leftovers in an airtight container for up to 3 days and gently reheat with a splash of water.
