Description

This sweet savory chicken dinner roasts on one pan with juicy pineapple, tender peppers, and red onion. The honey soy pineapple sauce turns glossy and clings to the browned chicken for an easy rice bowl meal.


Ingredients

  • 1 ½ lbs 700 g boneless skinless chicken breasts, cut into 1 inch pieces
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, cut into wedges
  • 1 ½ cups fresh pineapple chunks, or canned and drained
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp chili flakes, optional

Sauce (for tossing & drizzling)

  • ⅓ cup low sodium soy sauce
  • ¼ cup pineapple juice, from the can or fresh
  • 3 tbsp honey, or brown sugar
  • 2 tbsp rice vinegar, or apple cider vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water, optional for thickening

Instructions

  1. Heat the oven: Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. Season the chicken: Add the chicken, bell peppers, red onion, and pineapple to the pan. Toss with olive oil, garlic, salt, black pepper, paprika, and chili flakes until evenly coated.
  3. Roast the pan: Spread everything into one layer and roast for 18 to 22 minutes, stirring once halfway through, until the chicken reaches 165°F and the pineapple has caramelized edges.
  4. Simmer the sauce: While the chicken roasts, whisk soy sauce, pineapple juice, honey, and rice vinegar in a small saucepan. Simmer for 3 to 5 minutes, then whisk in the cornstarch slurry if you want it thicker.
  5. Toss and finish: Drizzle most of the sauce over the roasted chicken and vegetables, then toss gently. Return to the oven for 2 to 3 minutes until the sauce bubbles and coats everything.
  6. Serve warm: Spoon over rice and drizzle with the remaining sauce.

Notes

Use chicken thighs for a juicier version, or swap tamari for soy sauce to make it gluten free. Store leftovers in the fridge for up to 4 days and reheat with a splash of pineapple juice or water to keep the sauce glossy.
