Description

Slow Cooker Honey Garlic Chicken is tender, sticky, sweet, and savory with almost no hands on cooking. Serve it over rice with scallions and sesame seeds for an easy dinner that feels cozy and complete.


Ingredients

  • 2 pounds boneless skinless chicken thighs

For serving: Chopped scallions, sesame seeds, and rice, optional, to taste

Sauce:

  • ⅓ cup low sodium soy sauce
  • ⅓ cup honey
  • ⅓ cup ketchup
  • 6 cloves garlic, minced
  • ½ teaspoon apple cider vinegar
  • 1 teaspoon grated fresh ginger
  • 1 pinch crushed red pepper flakes, optional
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Mix the sauce: Whisk soy sauce, honey, ketchup, garlic, apple cider vinegar, ginger, and red pepper flakes until smooth.
  2. Add the chicken: Place chicken thighs in the slow cooker and pour the sauce over the top. Turn the chicken so every piece is coated.
  3. Cook until tender: Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken reaches 165°F and pulls apart easily.
  4. Thicken the sauce: Transfer the chicken to a plate. Whisk cornstarch with water, stir it into the hot sauce, and cook on high for 10 to 15 minutes, or simmer in a small saucepan for 2 to 4 minutes until glossy.
  5. Finish and serve: Shred or slice the chicken, then toss it back into the thickened sauce. Serve warm over rice with scallions and sesame seeds.

Notes

Use chicken breasts only if you check them early, since they can dry out faster than thighs. Leftovers keep well in the fridge for up to 4 days and reheat best with a splash of water.
