Ingredients
- 6 strips bacon
- 1/2 yellow onion, finely diced
- 1 1/2 cups chopped button mushrooms
- 3 cloves garlic, minced
- 2 cans cream of mushroom soup, 10.5 ounces each
- 1/4 cup milk
- 1 cup shredded Monterey Jack cheese
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 4 cans cut green beans, 14.5 ounces each, drained well
- 1 1/2 cups French fried onions
Instructions
- Cook the bacon: Heat the oven to 350°F. Cook the bacon in a large skillet over medium heat until crisp, then transfer it to a paper towel lined plate and crumble when cool.
- Cook the vegetables: Leave about 1 tablespoon of bacon drippings in the skillet. Add the onion and mushrooms, then cook for 5 to 7 minutes until softened and lightly browned.
- Make the creamy sauce: Stir in the garlic and cook for 30 seconds. Add the cream of mushroom soup, milk, Monterey Jack cheese, crumbled bacon, salt, and pepper, then stir until creamy and the cheese starts to melt.
- Add the green beans: Fold in the drained green beans until evenly coated. Spread the mixture into a 9 by 13 inch baking dish.
- Bake the casserole: Bake uncovered for 25 minutes, until the edges are bubbling and the center is hot.
- Add the topping: Sprinkle the French fried onions over the top and bake for 8 to 10 more minutes, until golden and crisp. Let it rest for 5 minutes before serving.
Notes
Drain the green beans well so the sauce stays thick and creamy. For make ahead prep, assemble the filling up to 1 day in advance, then add the French fried onions right before baking. Leftovers keep in the fridge for up to 4 days and reheat best in the oven.
