Description
This Zesty Street Corn Chicken Rice Bowl layers smoky skillet chicken, creamy lime corn, and fluffy rice into one bright, filling dinner. It is easy enough for a weeknight and fun to finish with avocado, cilantro, jalapeños, or extra lime.
Ingredients
For the Chicken:
- 1 lb boneless skinless chicken breasts or thighs
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil for cooking
For the Street Corn:
- 2 cups corn, fresh, frozen, or canned and drained
- 2 tbsp mayonnaise
- 2 tbsp sour cream
- 1 tbsp lime juice
- ½ tsp lime zest
- ¼ tsp chili powder
- ¼ tsp salt
- ⅓ cup crumbled cotija cheese
- 2 tbsp chopped cilantro
- For the Bowl:
- 2 cups cooked rice, white, brown, or cauliflower rice
Optional toppings:

Instructions
- Season the chicken: Pat the chicken dry, then toss it with chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
- Cook the chicken: Heat olive oil in a large skillet over medium high heat. Add the chicken and cook for 5 to 7 minutes, turning as needed, until golden and cooked through to 165°F.
- Char the corn: Move the chicken to a plate, then add the corn to the same skillet. Cook for 3 to 5 minutes until hot and lightly golden in spots.
- Make the street corn: Reduce the heat to low and stir in mayonnaise, sour cream, lime juice, lime zest, chili powder, and salt. Fold in cotija and cilantro, then remove from the heat.
- Assemble the bowls: Divide the cooked rice among 4 bowls. Top with street corn and sliced chicken.
- Finish and serve: Add green onions, cilantro, lime wedges, avocado, or jalapeño slices as desired. Serve warm while the chicken is juicy and the corn is creamy.
Notes
Use chicken thighs for extra juicy bowls, or swap sour cream with Greek yogurt for a tangier, lighter sauce. Store chicken, rice, and corn in airtight containers in the refrigerator for up to 4 days. Keep fresh toppings separate and add them after reheating for the best texture.
